The Pico of green mango is known for its sourness that makes it most compatible with shrimp
paste or bagoong. Because of this sourness too, it is also best to "buro" or "pickle" with sugar, salt, black pepper, and sometimes red pepper. 
 

These mangoes are pickled as soon as they are picked from the tree to ensure that crunch! 

 

Best eaten on its own as an appetizer or with fried food like pork and fish.
